Ingredients
  

  • 3-7 oz chicken breasts, boneless and skinless about 21 oz
  • 1 packet taco seasoning
  • 6 oz salsa I like Jack’s Special Salsa – Medium
  • 2 oz lime juice about 2 limes
  • 2 packages Mission: Carb Balance Soft Taco Tortillas Flour, Wheat, Spinach, or Sundried Tomato Basil

Instructions
 

  • Add chicken breast, salsa, taco seasoning, and lime juice to a crockpot
  • Cook on low for 6-8 hours (or high for 3-4 hours)
  • Remove the lid, shred/mix the chicken in the crockpot with 2 forks until fully combined
  • Serve over tortillas
  • Add your favorite toppings such as — lettuce, tomato, onion, shredded cheese, pickled jalapenos, salsa, hot sauce, sour cream (or plain Greek yogurt), guacamole/ avocado, corn, fajita peppers, onion, and mushrooms

Notes

  • This recipe makes 12 tacos with approximately 1.75 oz of chicken per taco
    • There will be 4 tortillas leftover
  • Mission: Carb Balance Tortillas are a high-fiber tortilla option. You can substitute regular corn or flour tortillas if you prefer.
  • Instead of tacos, you can use the chicken from this recipe to make salads, quesadillas, wraps, etc.
