Ingredients

  • 3 pounds of chicken breast or tenderloins
  • Juice of 1 lemon
  • ¼ cup olive oil
  • 1 tbsp Dijon mustard
  • 2 dashes soy sauce
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • ½ tbsp dried oregano
  • ½ tbsp paprika
  • ½ tsp dried thyme
  • ½ tsp dried sage
  • ½ tsp black pepper
  • ½ tsp kosher salt

Instructions

  • In a large bowl, whisk together all wet and dry ingredients to form a thick sauce.
  • Add the chicken to the sauce and evenly coat. Marinate in the refrigerator for at least 1 hour, or ideally overnight for the best flavor.
  • Preheat your grill to medium-high heat, about 375-400°F.
  • Remove the chicken from the marinade and place on the grill. Grill over direct heat for 3-8 minutes per side, or until fully cooked and internal temperature reaches 165°F. See notes below for cooking temps.
  • Remove the chicken from the grill and let it rest for 5 minutes before serving.
  • Serve the chicken with your favorite sides like rice, grilled vegetables, or a fresh salad.

Notes

  • Cooking Changes for Chicken Breast: Chicken breast pieces are typically larger and thicker, so they require longer grilling times (6-10 minutes per side) to ensure they are cooked through.
  • Cooking Changes for Chicken Tenderloins: Chicken tenderloins are smaller and thinner, so they cook more quickly (4-5 minutes per side).
  • Use a meat thermometer to check for doneness, ensuring the chicken reaches the safe internal temperature of 165°F (75°C).
