Greek-Inspired Cucumber Tomato Feta Salad

Ingredients
- 2 cups cherry tomatoes halved
- 6 mini cucumbers quartered and diced
- 6 oz crumbled feta cheese
- 1/2 cup red onion small diced
- 2 tablespoons fresh parsley chopped
- 8 garlic cloves minced
- salt and pepper to taste
Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoon red wine vinegar
- juice of 1 lemon
Instructions

- Pour the dressing over the salad ingredients in the large mixing bowl.
- Gently toss the salad until all the ingredients are evenly coated with the dressing.
