Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • Juice of 2 limes about 3 ounces
  • 1/4 cup chopped fresh cilantro
  • Salt to taste

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rice and water or chicken broth.
  • Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Once cooked, remove the saucepan from heat and let it sit covered for 5 minutes.
  • Fluff the rice with a fork.
  • Stir in the lime juice, chopped cilantro, and salt to taste.
  • Cover the saucepan again and let the rice sit for a few minutes to allow the flavors to meld.
