Cauliflower Fried "Rice" Bowl
Ingredients
- 1 tbsp olive/canola/vegetable oil
- 1 large clove garlic crushed
- 1/2 tbsp grated fresh ginger
- 1 (12-ounce) package Green Giant Riced Cauliflower Medley
- 1 (10.8-ounce) package Birds Eye Asian Medley frozen vegetables
- 2 tbsp low sodium soy sauce or coconut aminos
- 2 eggs lightly beaten and scrambled
- 2 cups cubed cooked chicken or shrimp
Instructions
- Heat olive oil in a large nonstick skillet/wok and cook garlic and ginger over medium heat 1 minute. Add Riced Cauliflower Medley and Asian Medley frozen vegetables and cook 5 minutes, stirring frequently, or until vegetables are tender-crisp. Stir in soy sauce and cook 1 minute.
- In the same pan, add in eggs, stir until scrambled, about 1-2 minutes.
- Stir in cooked protein and enjoy
