Cauliflower Fried "Rice" Bowl

Ingredients
  

  • 1 tbsp olive/canola/vegetable oil
  • 1 large clove garlic crushed
  • 1/2 tbsp grated fresh ginger
  • 1 (12-ounce) package Green Giant Riced Cauliflower Medley
  • 1 (10.8-ounce) package Birds Eye Asian Medley frozen vegetables
  • 2 tbsp low sodium soy sauce or coconut aminos
  • 2 eggs lightly beaten and scrambled
  • 2 cups cubed cooked chicken or shrimp

Instructions
 

  • Heat olive oil in a large nonstick skillet/wok and cook garlic and ginger over medium heat 1 minute. Add Riced Cauliflower Medley and Asian Medley frozen vegetables and cook 5 minutes, stirring frequently, or until vegetables are tender-crisp. Stir in soy sauce and cook 1 minute.
  • In the same pan, add in eggs, stir until scrambled, about 1-2 minutes.
  • Stir in cooked protein and enjoy
